Legend has it, 200 years ago, when Awadh was in the grip of a widespread famine, the ruler decided to start an employment scheme by commissioning the construction of the Bara Imambara.
Cooks were employed round the clock to provide ready meals to workers. To make matters simple, rice, vegetables, meats and spices were thrown into large vats which were sealed and put on the fire to cook. One day, the nawab got a whiff of the aroma emanating from one such vat while he was passing by. And the rest, as they say, is history.
Based on the technique of slow cooking called ‘dum’, involving dough-sealed vats of finely flavoured meat, vegetable and rice preparation, this cuisine opens up a whole new world of culinary refinement.
