Pan Indian in nature, the cuisine explores the blend of condiments, vegetables and lentils with a generous dollop of jouissance.

Royal Vega introduces its guests to the celebrated vegetarian traditions of the Indian subcontinent; those of the immediate neighbourhood and those of countries even further afield. Guided by the precepts of Ayurveda, much of the cuisine on offer at Royal Vega is attuned to the season, observing the ideal combination of tastes.

For all the vegetarians - Royal vega, ITC is the perfect place to rejoice a purely herbivorous menu that is based on the ancient Indian system of cooking according to the six seasons, orrithus. Inspired by the teachings of Ayurveda ,the carte du jour changes every two months based on what vegetables are harvested and are best suited for the weather.
Most of the closely guarded recipes, gathered over the years, are from home's across the four states of South India , including exclusive dishes such as a banana flower preparation particular to the tribes of Sambalpur in Orissa, Rava-stuffed cabbage inspired by the Greek Dolmades, the Kashmiri knoll kohl, the ancient Punjabi-watermelon based matira curry and the slow-cooked Dehlvi-inspired paneer pipli.
The dishes are served in a regal ambience where cups,ewers and cloches are inspired by Nizami and Mughal aesthetics, with service that is attentive yet thoughtfully discrete.
The best way to explore the cuisine at Royal Vega is to order their platter (thali) that rounds up all the day’s specials into one overwhelmingly gratifying meal. From milling flour to grinding their own masalas, most of the ingredients are crafted in-house. Royal Vega, thus strikes the perfect balance between goodness and flavour.
